Fermentation & Prototyping Support Internship

SABLIÈRE is a young, ambitious startup redefining alcohol-free fine sparkling. The SABLIÈRE team are currently pioneering a new category that captures the depth and elegance of Blanc de Blancs, Rosé, and Blanc & Noir Champagne - without alcohol or grapes.

This is not a slick corporate lab. It’s a scrappy, hands-on environment where innovation happens daily. You’ll be working closely with an industry expert with over a decade of experience, learning in real time, and contributing to something from day one. The Role:

Based in the Edinburgh area, SABLIÈRE are looking for an intern to support their lab-based prototyping work. You’ll be involved in fermentation trials, monitoring process conditions, and helping to refine our novel production techniques.

Key Responsibilities:

  • Assisting with fermentation setup, processing equipment, and ingredient preparation

  • Monitoring equipment and fermentation progress

  • Conducting analytical work to assess quality and stability

  • Supporting the optimisation of our unique production process

What SABLIÈRE are Looking For:

  • A science or engineering background (e.g. brewing, food science, biochemistry, microbiology, or a related field)

  • A passion for fermentation, beverage innovation, and the science of taste

  • A practical, problem-solving mindset with strong attention to detail

  • Integrity, curiosity, and ingenuity - someone who enjoys creative thinking and tackling challenges

  • Kindness and adaptability - this is a small, collaborative team where everyone’s contribution matters

  • Comfort working in a hands-on lab setup (garage-based)

Commitment & Opportunity:

  • Minimum 2 days per week (flexible scheduling)

  • Based in our small but ambitious lab, working closely with our co-founder

  • Potential for a long-term role if there’s interest on both sides
